Could there be anything better than Chocolate Brownies laced with Peanut Butter & Dulce de Leche, served up sundae style with lashings of chocolate sauce and ice cream …Not in my books there’s not.

Chocolate Brownies with Peanut Butter and dulce de leche

These are classic, gooey, intensely chocolatey brownies, in all their goodness. You don’t have to put the peanut butter and dulce de leche in, but it does add that extra layer of decadence. If you prefer to lighten them up, you could instead add a layer of raspberries in the middle, the burst of tart berries work really well with the sweet chocolate, but if it’s been a bad day I say go with the dulce de leche.

Chocolate Brownies laced with Peanut Butter & Dulce de Leche
makes 16

Ingredients:
– 250g unsalted butter
– 200g dark couverture chocolate (or a combination of dark & milk)
– 1 3/4 cups brown sugar
– 4 eggs
– 1 1/4 cups plain flour
– 1/3 cup good quality cocoa powder
– 1/4 tsp baking powder
– 1 tsp vanilla extract
– Peanut butter (no added sugar variety)
– Dulce de Leche
– Ice cream to serve

Method:

Preheat oven to 160 degrees c, and line a 20x20cm square baking tin with baking paper.

Melt the butter and chocolate in a bowl over a saucepan of simmering water until smooth, stirring occasionally. Set aside to cool slightly. In a large bowl mix together the eggs and sugar. Sift in the flour, cocoa powder, and baking powder, along with the melted chocolate and vanilla, and then mix until just combined.

Pour half the mixture into the prepared tin, then drop teaspoonfuls of peanut butter and dulce de leche all over the top. Pour over the remaining batter, then run a butter knife through the mixture to swirl the peanut butter and dulce de leche slightly.

Bake in preheated oven for 55min-1hr, or until just set. Cool in the tin for 10mins, before turning out onto a wire rack to cool. Once cool cut into 16 squares.

To serve the brownies sundae style, place a large dollop of chocolate sauce on a plate and then place a warm brownie in the center. Add a generous dollop of dulce de leche on top of the brownie, then a large scoop of chocolate or vanilla ice cream. Sprinkle with some chocolate shavings to finish.
