Key Lime Pie

If you’re looking for a simple and scrumptious summery dessert, then look no further than Key Lime Pie. Sweet, zingy and creamy all at once, it’s the perfect way to end a bbq on a hot summer’s day. And the added bonus, is that it’s just so simple to make, the only hard part is waiting for it to chill in the fridge before you can devour it!

Ingredients:
– 300g digestive biscuits
– 150g butter, melted
– 395g tin condensed milk
– 3 egg yolks
– 4 limes
– 300ml thickened cream
– 1tbsp icing sugar
– 1tsp vanilla extract
– lime zest to decorate

Method

Preheat the oven to 160 degrees c. Process the biscuits in a food processor until they resemble a fine crumb (or alternatively you can smash them up with a rolling pin in a plastic bag). Place the crumbs into a bowl and mix through the melted butter. Press the crumb mixture into the base and sides of a 22cm loose bottomed fluted tart tin. Bake in the preheated oven for 10mins, then set aside to cool.

Place the egg yolks in a bowl of an electric mixer fitted with a whisk attachment and whisk for 1 min. Then add the condensed milk and whisk for a further 3mins. Next add both the zest and juice from the limes, and whisk again for another 3mins. Pour the mixture into the cooled base, and bake for 15mins or until set. Cool slightly in the tin before placing it in the fridge to chill for 2-3hrs or overnight.

Once cooled, carefully remove it from the tart tin and transfer to a serving plate. Place the cream, icing sugar and vanilla in the bowl of an electric mixer and whisk until soft peaks form. Generously pile the whipped cream on the top the key lime pie and decorate with extra lime zest to finish.
