You gotta love the holiday that involves eating chocolate for breakfast and gorging on sweets all day, oh and not to mention the four day weekend! And for those moments when you need a break from the chocolate, its time for an Easter cupcake…
– 1 quantity of vanilla cupcakes (recipe here)
– 185gms softened unsalted butter
– 2 1/4 cups of icing sugar
– 2 tbsp milk
– Yellow food colouring
– Small candy covered chocolate Easter eggs
Prepare the vanilla cupcakes as per recipe here and allow to cool. To make the buttercream frosting beat the butter until pale and creamy. Add the icing sugar and milk and continue to beat until light, fluffy and all the sugar has dissolved. Add a couple drops of yellow food colouring and beat for 1min to combine.
Pipe the buttercream on the cooled cupcakes, then add a nest of 3 Easter eggs to the top. If you like you can also add some broken up flake chocolate bar around the eggs to look like twigs. Add a cute Easter cupcake topper to finish.
To make the cupcake toppers all you have to do is create your favourite Easter design in a circle shape and print out. Glue the circles onto some thick cardboard, and then glue the two sides together with a toothpick in the middle.
