This is one of my favourite easy summer salads. It contains everything that I love – BBQ, chargrilled flavour, and my favourite vegies (oh and maybe a beer while I’m cooking the barbie too).

It’s also so versatile, you can change it up with whatever is in season, or whatever your preferred ingredients are. For example you could use the ingredients I’ve used below, or you could also use asparagus, pumpkin, sweet potato, fennel, leeks, whatever takes your fancy. Here’s my favourite version.

Chargrilled Vegetable Salad

Ingredients:
– Red Capsicum
– Zucchini
– Eggplant
– Red Onion
– Cherry tomatoes
– Baby Spinach and Rocket leaves
– Olive oil & balsamic vinegar

Method:

Heat the BBQ to medium-high heat. Cut the capsicum, zucchini, and eggplant into strips 1/2cm thick, and cut the onion into 1cm thick slices. Toss the vegies in olive oil, salt and pepper.

Chargrill the vegies on the BBQ until they are cooked and have nice chargrill marks on them, baste with a little extra oil during cooking if they are getting a little dry or too dark. I tend to put the eggplant and capsicum on first, then the onion, and the zucchini last as that requires the least amount of cooking time. As the vegies are done, put them in a bowl and set aside to stay warm.

To assemble, cut the cherry tomatoes in half and place in a bowl with the baby spinach and rocket leaves. Toss through with the warm vegies, olive oil and balsamic vinegar until all nicely coated and glossy.

You can serve this salad by itself or if you want to beef it up a bit you can serve it with grilled haloumi, chicken, seafood, steak, or you can also toss through some cous cous to make a more substantial salad.
