The Best BBQ Pork Ribs…EVER

Sticky, tender, juicy BBQ pork ribs have to be one of my absolute favourites, in fact I could probably eat my weights worth of them if I had the chance. My go to recipe for pork ribs is from SBS’s Food Safari, and because you marinate them and bake them before barbequing they are super tender. Add to that the chipotle barbeque sauce which is the perfect mix of spice and sweet and I’m in heaven!

BBQ Pork Ribs

– American Style Pork Rib racks
– Pre-prepared dry spice rub (see SBS link below for recipe for spice blend)
– 1-2 cans dark beer
– Home made or really good store bought BBQ sauce


Step 1 – Remove the membrane from the pork ribs by pulling up the edge of the shiny membrane with a knife (a butter knife will do the trick) just far enough so that you can grip it. Using some paper towel grab the edge of the membrane and pull it back carefully to remove it. You’ll need to use paper towel otherwise its just too slippery to grip. It takes a little while to get the hang of doing this, but the ribs will be super tender if you do.

Step 2 – Rub the ribs with the pre-prepared spice mix, then place in a tray and cover with 1-2 cans of dark beer (Guinness is what I use). Place the ribs in the fridge to marinate for 1-2 hrs.

Step 3 – Remove the ribs from the marinade and wrap in foil. Place in the oven at 160 degrees celcius for 2 hours.

Step 4 – Take the ribs out of the oven and brush them with BBQ sauce. Cook on a BBQ grill for 6-7mins each side to get charred and caramelised.

Step 5 – Get your hands dirty and dig in! I like to serve mine with extra BBQ sauce on the side, and some corn cobs cooked on the BBQ.

Handy Tip:

The basics of the recipe work for whatever flavours you like. You can add any flavours in the spice mix, and you can use a good bottled BBQ sauce if you can’t be bothered making your own.
