Ah bread, glorious in all it’s forms, and especially in the form of this Tomato, Basil & Parmesan Flatbread.

Best eaten warm out of the oven, this flatbread is crispy on the outside, and full of flavour on the inside due to the addition of olive oil in the dough. You can also top the breads with any other toppings you like, for example rosemary & sea salt, olives, roasted capsicum, prosciutto, caramelised onion, you get the gist…

Tomato Basil & Parmesan Flatbread

Tomato, Basil & Parmesan Flatbread
Makes 2 – Recipe from Bourke St Bakery

Ingredients:
– 600g strong bread flour
– 13g fresh yeast
– 15g salt
– 20ml extra virgin olive oil
– 20ml milk
– 400ml water
– 20 cherry tomatoes, halved
– 50g parmesan, cut into pieces
– Handful of fresh basil leaves, torn
– 45ml olive oil

Method:

Combine all the ingredients in the bowl of an electric mixer fitted with a dough hook. Mix on low speed for 2mins or until combined, then increase the speed and mix for another 10mins or until smooth and elastic. Place the dough in an oiled bowl and leave to prove in a warm place for 1.5 hrs, knocking back the dough every 30mins. To knock back the dough place onto a floured surface and flatten out to a rectangle 1 inch thick, then fold it into thirds, turn 90 degrees and fold into thirds again before placing back into the bowl.

After the bulk prove take the dough out of the bowl and divide into two. Place onto a baking tray and press or roll the dough out into two rectangles approx 25 x 10cm and 2cm thick. Use your fingers to make indents all over the dough, set aside to prove for 15mins. Add the tomatoes cut side up, basil and parmesan, pushing them into the bread. Brush all over with the olive oil, sprinkle with a little salt & pepper and set aside for 15-20mins.

Bake in a preheated oven at 180 degrees celcius for 30mins or until golden. Serve warm cut into slices.
